How do you make potato salad (new thread)

With celery, Disease McCuntFace:

  • 5 pounds Yukon Gold potatoes or Klondike Goldust potatoes
  • 2 cups mayonnaise (your favorite brand)
  • 1 cup refrigerated sweet pickle relish
  • 2 tablespoons yellow mustard, or 1 part yellow + 1 part dijon
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon celery seeds
  • 1/2 teaspoon paprika
  • 4-5 hard boiled eggs, peeled and chopped
  • 3 celery stalks,  diced
  • 1/2 cup sweet onion,  diced
  • 1 tablespoon fresh chopped dill
  • Salt and pepper

Now, my personal as well as professional outlook on this situation: You are calling out Still_Me over a dispute in another thread. Stillz went to culinary school. You did not. Therefore she is superior to you on this subject.

Also this. I even grew up in a heavily Amish populated area, where all the potato and macaroni salad was automatically good and made right. I can't stand it. Nor can I stand coleslaw. I hate Mayo in general.

I make it to suit me, since I'm not feeding anyone else.  There are three things I do that probably no one does (besides not using celery or fresh onion - I don't like crunchy potato salad): I make the "sauce" separately first so I can tweak it until it tastes the way I want, then add the egg whites and potatoes until I get the best ratio and coverage;  I use a tablespoon or two of sugar - surprised the hell out of me that this was key to making it taste right, but it does as long as you don't add so much that it actually tastes sweet (add more dill relish and/or mustard if that happens to tart it up again);  and while the potatoes are cooling after cooking, I take a small one (about pool ball size or smaller) and mash it up like mashed potatoes (including a splash of milk) and add that to the sauce. It keeps it from getting runny and adds a lot of body, but still tastes like potatoes, without making it chalky like cornstarch does.

I use about 1 1/2 eggs per potato (so like maybe a dozen eggs for 6-7 potatoes), but I don't always use all the egg whites.  I also use both sweet and dill relish, plus a ton of onion powder (ok, 1-2 Tbsp) and a little paprika.  Lots of mayo, a Tbsp or 2 of mustard, pinch of salt.  I add some celery salt if I have it, but I usually don't have any that's not old and crappy.

I make good, thick deviled egg potato salad, as long as you don't know what's in it. :ph34r:

Mayo is eggs and oil... I hate it, but it's great for baking as an alternative to eggs or eggs and oil.

My mom used to make it - I think it's German. You fry up bacon, chop it into bits, and save the grease. Meanwhile, you boil potatoes,  cut them up while still warm, add the bacon, chopped scallions, and some chopped endive (not the Belgian kind, the other kind). Pour the bacon grease and some cider vinegar over it, toss (the grease and vinegar become a kind of bastard vinaigrette), and serve while still warm. We used to put sour cream on it as a garnish/because Slavic. ( My dad's side is Polish; sour cream was pretty much a food group at my grandma's.)

Pretty much this, but from Publix. Potato salad isn't high on my list of foods to prepare because I only want to eat a small batch every 4+ months, and it hurts me to spend all that effort when a simple baked potato would have made me happier.
