I'm spoiled by the new electric panini makers they have.  Those things have more than enough coverage and they don't require playing with the stove.

It doesn't just press the sandwich. It is smaller than the piece of bread so the two slices seal together and keep everything inside.

I thrive at -30'F. I've taken trash out to the dumpster in shorts and a tank top in those temps. The heat in the apartment is kept at the minimum required for the pipes. 

And steadily moving air is better for the parakeets in the summer. Having a north-facing apartment, I don't deal with the direct southern summer sun.
