The lady friend lived in Wisconsin for a while ....I just sent her a text with the link asking if she's ever heard of this....I'm sure the answer will be no whenever she gets to look at it.

I've heard of them - but not in connection with Wisconsin. They're referenced as one of the main characters' favorite foods in Pat Frank's Alas, Babylon,  which is set in Florida.

It sounds good - steak tartare without the egg yolk or capers.

When I was a kid (at grandmas house) we used to take little bits of raw meat and put salt on it and eat it...then my cousin got ecoli...almost died....that shit stopped real quick

I used to pick off fatty bits of raw bacon and eat it

I used to use bacon to fish in the local creek.  It was easier just to flip rocks over & grab crawdads.
