I'm not sure where the tradition of spirits with disjointed limbs and appendages comes from, but at least part of the menace comes from the idea of the body not being controlled by its own soul. Possession stories often use the disjointed appendage as visual manifestation of demonic possession, so it's only natural to assume that the source of this particular type of folklore is from early attempts to explain neurological disorders and their relationship to motor disorders in humans.

Without having a whole lot about West African deities and supernatural folklore, it's worth noting that both places were populated by people from there via the slave trade starting in the 16th Century. As far as creatures with feet or appendages that can swivel, I can find at least one that hails from the tropics of the Americas, which could be a source of that part of the myth. At any rate, it's not unreasonable to consider the possibility that the legends of the Curupira travelled from Brazil to the Caribbean because of that shared ancestral connection.
