It was a couple months ago, but I watched a video on how to swap hard drives, and I found it was really easy. You should have no problem at all. One nice thing is that you don't have a lot of data to transfer over to the new drive from the old one. That will cut a chunk of time, because PS3's aren't exactly fast. The last system back-up I did took over ten hours to complete. (I have a lot of crap on mine.)

There are videos on youtube that show you how to swap the old hard drive out for a bigger one. It shouldn't be difficult to do.
