I made from scratch sausage ravioli last night and shaved a very nice 18 month American Grana over them. good nutty flavor without the price tag a legit parmesan has.

No clue what that is. I like yellow American cheese, Swiss cheese, cheddar cheese, mozzarella cheese, and some French cheeses that I can't think of. Hate that gorgonzola shit though, wack ass cheese tastes a thousand years old. Rancid!!!

Two recent cheeses I've had that are mind-blowing are on the sweeter side. One is a Lemon Baked Ricotta and another is a White Stilton with Ginger and Mango Pieces. They're great on their own, but are amazing on ginger snaps.

I think the fanciest cheese I've ever tried was Gouda.  I bought a pack of it at the store once, it wasn't very good.

I've always wanted to try Fondue though
