Funny enough, he too only gets it the way he likes it about 30% of the time. I swear, in my kitchen, sometimes cooking science ceases to exist. For real. Both of us, we can cook something 100 times. The same way every time. For whatever reason every now and again, everything we cook fucks up. I just know we’re blowing up that kitchen some day. I've made it a couple of times for my brother and getting the right amount of butter / oil under the egg while cooking it makes it really hard to get right. Meanwhile, scrambling eggs and cooking them in the microwave is like the easiest thing to do. Quote

Floating the egg mix on top of the butter is tricky as all hell. I'm constantly working the edges so it to doesn't stick and burn while the egg actually cooks and, at some point, there's a flip. Then the result is so fragile that even the slightest amount of too much stuff means the omelette cracks. All that stuff relates to sunny side eggs in some form. Quote

discolé monade Posted 8 hours ago Posted 8 hours ago the trick with the "right amount of oil" under, over, backwards and fwd is this. a dab is fine. it's the heat. keep the heat the same...obviously...but remove the pan. that way the oil/butter doesn't burn, but the egg still cooks. instead of poking leave it until off the heat...then you can nudge the edges. 1 Quote
