It works well. I am in the process of updating the appliances... got the dishwasher and fridge... stove and sink next.

I have an electric oven that Iove using, so I'm not saying their bad.  But, I would never say an electric convection is better than a gas one.  It takes longer to heat, loses heat faster when the door opens, and they don't have the durability (even the the expensive ones).

burning gas produces some moisture. so a gas oven is more humid. many many people are saying the humidity isnt as good for roasting as a dry electric oven.

I've never heard anyone say that.  Yes, convection ovens are drier (on account of the air circulation), but that only changes how it cooks.  Gas ovens are quirky and it's a little harder to bake or roast in a gas oven when you don't have a guarantee of even temperature spreads, so there's that.

gas being inherently better is an internet thing from ppl not being able to wait 5 seconds. its humid in the oven

yes I have a degree in culinary arts business management and advanced pastry techniques...

but I suppose people have their own preferences...and if their preference isn’t gas then they are wrong....
