It kind of ties into my longstanding issues with getting omlettes right, though obviously not an issue with the whites. Floating the egg mix on top of the butter is tricky as all hell. I'm constantly working the edges so it to doesn't stick and burn while the egg actually cooks and, at some point, there's a flip. Then the result is so fragile that even the slightest amount of too much stuff means the omelette cracks. All that stuff relates to sunny side eggs in some form.

I didn't realized this is why I don't like over easy / sunny side up until you said it. I've made it a couple of times for my brother and getting the right amount of butter / oil under the egg while cooking it makes it really hard to get right. Meanwhile, scrambling eggs and cooking them in the microwave is like the easiest thing to do.

My only point in the context of this thread is that it stopped being the "official" end of Christmas sometime after the middle ages - the last time that there was no delineation between the church and state.. Nowdays, there's overlap between the secular Christmas holiday and the Roman Catholic holiday because of the historic western tradition that underpins it. If the Roman Rite placed more emphasis on the Epiphany/Baptism sequence, we likely would see those holidays as official ends to the season.

I mean... that would be scary right? It's not a Wet Nightmare if it isn't really scary.
