the closest thing the evil mart here has looks like a loaf of bologna.

I HATE liverwurst... and that hate grew when I had to pressure cook it in a smokehouse on an industrial level. The most finicky, stinky, ugly (because they used yellow casings) thing I had to run. And if they exploded it was worse. UGH

I go to a local Italian butcher who makes a decent liverwurst. I usually eat with with yellow mustard and cocktail rye, but not very often.

pickled beat eggs. i have never heard of these. i've heard of pickled eggs.

They're eggs that have been pickled in beet juice. They're quite tasty, and the look like easter eggs.

Kroger has decent liverwurst as long as it isn't oscar meyer. That is like nasty bologna with spoiled liver. Blech.

I forgot to mention the thin sliced red onion.

Gotta have thin sliced red onion.

i figured they were pickled in beet juice, i've just never seen/heard this was a thing.

but, i think you could make these yourself.

i mean, pickling is pretty easy.

I would make my own, but I'm really clumsy.

Clumsiness + beet juice = a bloody mess.
