160 probably won't be a big issue. i mean, it's not fda compliant, but it's pretty close, and you're not cooking in a restaurant so you can do what you want. maybe you need to consider changing your food prep and cooking techniques to keep the chicken more moist. might make all the difference.

If you wanna risk salmonella.

 

There are ways to cook chicken to 165 without it becoming dry. You're cooking it too fast.

yeah that's not good...all it takes is one to get you literally deathly ill...when it's steak...as long as you sear the outside you're good...you can eat that shit blue...but not ground beef, poultry or pork

180 degrees in a toaster oven.  Toaster ovens trap the moisture and won't let the chicken dry out.  If the germs aren't dead at 180, we're too close to Zombie Apocalypse.
