Never done this before and I'm not sure why. This house smells goooooooood. So here's what I'm doing: 1 bag gala apples 1/2 cup brown sugar 1/2 an orange 5 cinnamon sticks 1 tsp whole cloves 1 whole nutmeg 1 tsp allspice Cut up apples and 1/2 orange. Add all ingredients to big pot with 10 cups water. Boil, reduce and simmer covered for 2 hrs. Pull oranges out, peel+mash apples in the pot, simmer 1 more hr. Strain and squeeze juice from pulp. Makes approx 1/2 gallon. If you want to add booze to make it more fun, add 1-2 cups spiced rum depending on strength preference. Bring heat back up to ~160⁰ (don't bring to a boil or the alcohol will boil off first). Enjoy.

this is similar to a build i did last year, with the only major difference being an nvme drive instead of ssd for the os. i've been pretty happy with it so far, for gaming and video editing. -

brewed a batch of a black ipa last night. it's still one of my favorite styles, even though it fell out of popularity a few years back. i say it's making a comeback, just you wait and see... anyways, we took the whole process another couple steps closer to viable commercial brewing. i picked up a grain mill and some water treatment chemicals. the mill means we can buy malted barley from anywhere, and process it right before we mash in, rather than having to buy it already milled. opens the door to cheaper/more variety of grains. the chemicals can be used to correct water imbalances to create the most favorable environment for the enzymes to do their starch conversion during the mash. and i have everyone else on board with helping me build out my HERMS brewhouse this winter. feels good to be back at it, after nearly 2 years of backing off for various reasons. -
a toilet keeps running and needs new tank parts installed. someone cracked a drain line on the kitchen sink and it needs replaced. still have to clean up the yard from the tree removal a couple weeks ago. neighbor's dog chewed a hole thru the fence and that needs fixed. cleaning, laundry, organization, the whole bit. and i finally have an afternoon off today, after 2 weeks of pretty much no free time, to get shit caught up. wife just texted me, says she wants to take the afternoon off (...?) so we can take the boys on an adventure to a nearby state park. always going, yet rarely getting anything done. such is life, i guess.

this was my process for the ps5 too. but spread it over 5 hours, a couple scotches, and a little bit of tired cussing at the screen at 1am.

usually kidney beans, with seasoning and whatnot added by manufacturer. can a guy use regular kidney beans and season them on his own? sure. but i said this was the easy recipe. i cut all the corners when i'm 2 hours from lunch and need to make a full batch. my cornbread was from a box too! 😲

it got down to 40F overnight on friday night, so chili season has started. made my first batch of the year this morning. here's my completely average and not difficult recipe. this is the easy way with canned tomato products, but you can replace with fresh tomatoes and/or canned if you're crafty like that. and i use seasoning packets because it's quick and easy, but you can mix up your own. ingredients are not necessarily exact measurements: 2lb ground beef 2lb ground pork a few red/green peppers (add poblanos for more flavor or a couple hot chilis for heat...but this is my mild, kid-friendly version) a couple vidalia / sweet yellow onions a few cloves garlic 2 big cans tomato sauce 1 big can diced tomatoes 1 small can tomato paste 2 cans ro-tel 1 big can chili beans 1-2 packets chili seasoning 1 can lager beer peanut butter cinnamon brown sugar red wine vinegar various spices to taste (i use salt, pepper, oregano, cumin, garlic powder, and chili powder. and cayenne pepper if going hot) dice peppers, onions, garlic. add oil to pan, heat, and saute diced veggies until soft. set aside. add pork / beef to pan, season to taste , brown & drain. combine canned tomato products, meat, veggies, canned beans, chili seasoning in 3+ gallon stock pot. add 1/2 can beer, drink other half. bring to boil, reduce to simmer. add 1-2 tsp red wine vinegar, pinch of cinnamon, 2 tbsp brown sugar, and additional seasonings to taste. if too acidic/tomato heavy, add a couple tbsp peanut butter. simmer for 1+ hours, stirring frequently to avoid scorching. serve with sprinkle of shredded cheddar, diced green onions, sour cream, or whatever you prefer. add a side of cornbread because chili & cornbread is damn tasty. btw, i'm stuffed.

we've only bought digital games on the ps4 (outside of the ps4 system bundle and psvr packs that came with discs) so hopefully all those purchases transfer over to the ps5. i still picked up the disc version of the 5 though...you never know when it might come in handy for some old-school action. i think psvr is supposed to be compatible with the 5 at launch, but even if it's not, we can still use it on the 4. the only ps we don't have is the ps2, and that's because the wife gave hers to a friend when she got the 3. still have all my old ps1 games from the 90's too. i wonder if they'd still work in any of the consoles...

there's a few decent ps4 games that i never played, coming in for free on launch day with ps+, so i'll have plenty of grinding to do. wife is pretty pumped for resident evil 8, dmc5, and god of war. i don't really have anything particular that i'm looking forward to, but i've never picked up a console on launch day before so why not. also an excuse to finally upgrade to a 4k tv lol. and demon souls looks like fun so ...
