I've never heard anyone say that. Yes, convection ovens are drier (on account of the air circulation), but that only changes how it cooks. Gas ovens are quirky and it's a little harder to bake or roast in a gas oven when you don't have a guarantee of even temperature spreads, so there's that.

No fucking clue what that even means. I have an electric oven that Iove using, so I'm not saying their bad. But, I would never say an electric convection is better than a gas one. It takes longer to heat, loses heat faster when the door opens, and they don't have the durability (even the the expensive ones).
