The rear exit from the kitchen is up a tall flight of stairs. The only way to carry out the waste products is through the dining area. That is, unless there's a porter strong enough to carry the bags two by two up the stairs. Management should have had some logistics figured out before putting a restaurant there. I'd strap the bins to a dolly and wheel them up one at a time. Unless they're massive bins I don't see there being an issue. Or they could invest in a lift system.
