  3. People try tell sell onions as Vidalia onions all over the place here. If they weren't grown in Vidalia, they aren't Vidalia onions. They are just a regular onion, but the soil is so rich in Vidalia, it makes them sweet. A Vidalia onion grown anywhere else is just an onion.
  4. I've never heard of Vidalia slaw. We aren't too far from Vidalia. I do know their onions are the sweetest you can find.
  5. Carolina style sauce is the next thing I'm going to work on. Especially since I'm 5 minutes from the SC line. I prefer sweet BBQ sauce over the mustard based sauces, but I am going to toy with it. I need more than one style of sauce in my arsenal.
  6. The first colonists were not Puritans. The pilgrims were a different breed. The later colonists were Puritans. The Founding Fathers, not so much. Puritans were a radicalized religious and political group who were set on reforming and purifying the Church of England of what they considered to be unacceptable residues of Roman Catholicism. Most escaped England due to religious persecution. But like England, the Puritan settlers here, also supported the idea of religious persecution. The Founding Fathers believed what they believed individually. Just like we all do today. There is no blanket statement regarding their religious beliefs. Not saying the Puritans were the best group of people, but this post leaves a lot to be desired.
  7. Our burgers. Fajitas. 2 inch t-bones. Grilled salmon, couscous, asparagus.
  8. I don't put much effort into plating, but the food was awesome.
  9. This was making carnitas. The traditional way. Topped with pico de gallo. Carnitas nachos.
  10. They come pre cured and smoked. But not enough smoke to my liking. I rub them in honey and brown sugar and wrap them. I let them sit in the refrigerator like that for a couple of days. Smoke them for 2-3 hours. They don't have to be cooked until done, since they're gonna be fried. Just long enough to get some good smoke on them. Cool them and slice them. The skin of the jowl turns into a shell pretty much. Just cut the meat away from the skin shell and slice it to fry it. Fries quickly on a flat top. You can eat the skin if you like, but I don't. It's super hard and caramelized. Good flavor but it'll break your teeth. Anyways, the fried jowl comes out better than bacon. Has a better flavor. Goes well like I mentioned above. BBQ sandwich with bacon and slaw.
  11. Hog jowl. Typical in traditional New Year's meals. We buy it and smoke it, then fry it and make bacon with it.

  13. Smoked butt, pulled. Smoked and fried jowl. Put both of those on a sandwich and top it with coleslaw and BBQ sauce. Good eating there.
  14. I make my own BBQ sauce. @lupin_bebop has had it. Very sweet with a little spice. Goes well on some pulled pork.

  19. I knew something was off about this post. But I didn't want to say anything. It was very hard to read that, but I managed. I didn't do a very good job of comprehending it, which led me to just posting some shit I've read. I made it a book club thread. I'm sorry.
