why simmering the spaghetti so long before dinner?

I only really simmer two things that I cook for so long. 

Spaghetti and chili. 

I simmer them for so long to allow the herbs and spices to put off their full flavors. I picked fresh oregano from outside, and chopped it up and added that, and since it is so fresh, it needs time to let all the flavors gel together. Also, the veggies need plenty of time to get tender. 

Chili on the other hand, I use a London broil, or a chuck roast to make chili with. It simmers all day to allow the meat to become very tender.

Not in 30 minutes. Unless you are just satisfied with shit.

I simmer my sauce all day. I happen to know what I am doing in the kitchen. 

I use fresh herbs and spices. Picked from my herb garden. Not a box kit that's ready as soon as the noodles have boiled. 

The vegetables in the sauce are also fresh. Onions, peppers, mushrooms and garlic. 

I don't make average spaghetti. Mine contains fresh ingredients, and has more than one cooking process it goes through.

ya ever notice that troopers walk like they have a stick in their ass?....I asked one why when I was hammered at the NYS fair once....but he laughed and just kept lookin down my shirt.......mind you I was underage to be drunk....but he never asked...even walked me to the wine tent

And yes I have noticed that. They walk just like you said.
