Where would I be now if...

Suppose that after completing slot mechanics training, I moved out of janitorial work and went full time as a mechanic?

Mechanics are not needed as much as techies who can work on the modern video slots.  The leap between the two involves a higher degree of electronic training than for mechanics, who are only trained to diagnose trouble with circuit boards and replace them.

Yet, even the very best techies aren't in high demand as casino employees because new slots come with maintenance contracts from the vendors.

What does a vendor do?  They expect the techies to also be truck drivers, loading dock raustabouts and part time salesmen.  What does a vendor pay for all those extras?

Is that even worth pursuing?

You know what they say.

Never try, never fail.

Excellent life motto.

Could-have-been's are distractions from could-still-be's. It's never too late to learn a new skill. Whether any given skill can materialize into meaningful opportunities in your career at this juncture is uncertain. Maybe unlikely, maybe not, We couldn't say. But perhaps it can enhance a hobby, or perhaps it will have useful applications in everyday life, or perhaps it just gives a little more breadth to your perspective of the universe; knowledge for its own sake is nothing to scoff at.

It was too late the day he was born.

We differ, without begging to.
If gorillas can learn sign language and intelligible orange jello can learn electoral college victory, then certainly Packard has the potential. Whether he will actualize it is another matter entirely, dependent mostly upon his own willingness and tenacity, which We will not comment upon further at the moment.

Because while granting some basic dignity on the occasion he's not explicitly being an obtuse tool may do little to increase the odds he decides that expanding his knowledge is a good thing, being a relentless dick will do far less. [/pollyanna]

Differ if you must, but learning a new skill is not the same thing as learning to expand one's understanding.  The latter is possible for everyone, the former is not (nor should it be).  There's nothing wrong with not learning a new skill, and as brutal as we can be, there's nothing wrong with being a janitor.  The OP, however, isn't about refusing to learn a new skill as much as it is about casually musing that those who do will be easily devalued by bosses for learning a "useless" skill.
