It's pretty simple....Cube some mangoes (I use 4 and cube them small but it may be less depending on the size), dice some red onion and red bell peppers, add a pinch or 2 of cilantro (I know some people hate cilantro, so even though I use fresh, dried may be a better option if you don't care for it) , a bit of lemon zest and fresh lime juice....and like a teaspoon of salt.
now this is just me, but I put the bell peppers in the food processor because I don't like chunks of bell pepper, but I leave the chunks of onion and mango.
