I actually prefer PVC. But, Pex is crimped together and those leak or break, it can't handle the cold as well -trust me, and their shark bite fix? So $5 for a fitting rather than 39 cents and an extra 5 minutes of time for PVC or copper.
Also, my city house has copper in it from 1894 still going strong. Let's see pex last that long.
Also you have to use blackpipe or galvanized steel pipe for gas/LP. There are flexible variants like Gastite and Trakpipe, but good luck affording that.
