I think Mexican street tacos usually have cotija on them, but shredded Jack or American kind of makes the taco greasy. It's all about the salsa. scoobdog Posted Wednesday at 06:53 AM Share Posted Wednesday at 06:53 AM Even the Mexican food we get here is different than what you would get in Mexico, but it tends to not be cheese heavy simply because what we think of as Mexican food is a heavy blend of Spanish influence, Mexican influences and the local indigenous foods.
