I'm not trying to be that guy, because I just found this out a few years ago ...but authentic tacos don't always have cheese....they can but it's not like a core ingredient 

Now I assume you just got screwed over by a Taco Bell or something, but the cheese shit is an us thing

They were beef vajitas that I call tacos because I don't like all the peppers and onions

My pile of grated cheese was not included

I'm not speaking for him because he lives a bit further north than me and it's not as Podunk as here, but we don't but used to....I used to love it on a Sunday after a long Saturday if drinking.

It got closed and became a real estate office

Believe it or not, I don't necessarily need cheese on my tacos either.  I think Mexican street tacos usually have cotija on them, but shredded Jack or American kind of makes the taco greasy.

It's all about the salsa.

that is...there is no such thing as a : tapatio, chili con carne, tacos with cheese, queso (the mexican grilled cheese...not the word.)

Even the Mexican food we get here is different than what you would get in Mexico, but it tends to not be cheese heavy simply because what we think of as Mexican food is a heavy blend of Spanish influence, Mexican influences and the local indigenous foods.  That's not to say there isn't still a lot of cheese, it's just not deployed so liberally across every dish like in Tex Mex.
