There was mercury in that show? Lol. I think the author just wanted Nozel to have liquid metal without really thinking about the properties of mercury. Yup, there was some pretty dark stuff in S3 like this (and a certain use of airbending), not sure they ever confirmed it by name, but they didn't need to, it was liquid metal and used as a poison on her to try to kill her in the Avatar State.
