Yeah  and lately it seems like a lot of Gen X stars and Gen Z influencers are dying at what feels like a crazy high rate

Yes. 

She always came across as somebody that you'd like to have as your own vet - very good at explaining without being condescending.

I used to watch that show but I never seen her. It’s cool that she was able to get a second career outside of Hollywood and she didn’t become a disaster like so many other child stars

It's funny - Peter Ostrum, the kid who played Charlie in the first Willy Wonka movie, did the same thing. Never acted in another thing, went to vet school, and opened a practice upstate.
