If you put some lime juice in your refried beans it makes a flavor extravaganza.

That honestly sounds gross. But I'll take your word for it.

There's a place called Sante Fe that people I have the displeasure of occasionally dining with tend to choose, and they squeeze lime on everything....Steaks, beans, chicken, fish, rice, the drinks, everything just lime.....It's just a bit much....I think it's a Texoma thing since I've never seen one outside of TX or OK, but if you're not a fan of lime, avoid it.

Lime juice has come to be a secret ingredient that I end up using alot lately. What's in this dressing? Lime juice. What's in this pasta? A small splash of lime juice. What makes this tea special? A spoonful of lime juice.

Lime doesn't go on everything, but they love limes in Mexico.

I'm sure there's a Sante Fe in your area....Mexican cuisine isn't their thing....Not even Tex-Mex....It's more of a Chili's if anything.

Never heard of it before.

Looks like the only one is in Santa Fe TX....I know I saw one in McKinney or Denison....But it's nothing to talk about so even if it was next door to hour house, I'd believe you.

It's a thing throughout the southwest, or anywhere meso-american cuisine has some form of influence.  Lime is often used to "cook" foods because of the high citric acid content.
