There's a place called Sante Fe that people I have the displeasure of occasionally dining with tend to choose, and they squeeze lime on everything....Steaks, beans, chicken, fish, rice, the drinks, everything just lime.....It's just a bit much....I think it's a Texoma thing since I've never seen one outside of TX or OK, but if you're not a fan of lime, avoid it. 1

It's a thing throughout the southwest, or anywhere meso-american cuisine has some form of influence. Lime is often used to "cook" foods because of the high citric acid content.
