That way there is something for everyone else to do besides sit back and watch Goku fight. from what I understand Vegeta gets several awesome moments in the Resurection F arc (such as killing several of Frieza's henchmen with one hit, and ALMOST killing Frieza himself) but he gets taken down a peg just as much as in this arc

Pilaf and Mai were only added to give Trunks a female love intrest his lack of one caused him to gain a fanbase of fujoshis who thought he was Gay so they gave him a girlfriend to shoot down that fanbase
