I have never had srapple.

But deer jerky is pretty good stuff. We haven't made it in several years though. I need to find the dehydrator.Β 

We do have our own deer processing facility here at the shop. We can skin them and process them right here.Β

My stepdad does a lot of the jerky, steaks, ground meat, and simple deboning... the scrapple, sweet bologna, sweet sticks, and whatever else they have made is done by a local Amish guy.

We have no Amish down here. So no scrapple. If I ever get back up to PA, I will have to try it.

A smoker can make good jerky, but you will have to get a few accessories for it. Such as the racks for the beef to hang on.Β 

If you've done it before that is awesome. If not, I'd suggest starting with a dehydrator. A lot easier.

A salt brine, and whatever flavor you're going for. I prefer regular myself, but you know what you like.

Mesquite or hickory would be good. I have been using peach wood chips a lot. They are pretty nice to smoke with.Β

I don't remember exactly where you live, but I hit google for the state (Unless I forgot that too) and apparently Publix sells it in the frozen breakfast sausage section.

But I don't know what brand. John F. Martin is the best out there.

Maybe talk to customer service or the deli or whoeverΒ and see if they can get some scrapple!
