I'm in the mood for some good old-fashioned sci-fi anime anyone has their they're suggestions like preferably space operas I need something to watch and chill out to

Planetes was last space themed anime I watched, it's pretty good.

Just go with the Outlaw Star.  It's both good enough and relatively shallow enough to be a go-to watch.
