GaiusIuliusCaesar Posted April 25, 2017 Posted April 25, 2017 It was thai red curry with pork. what I did was, fry 1 small onion and 3 cloves of garlic, minced after cooked add 4 table spoons of thai red curry paste mix and fry for 2 minutes then cut a pork loin into bite sized cubes and add it, stirring until cooked, season with curry powder, salt and pepper then add 4 indian eggplants, 2 bell peppers, 3 carrots, 1 blanched bamboo shoot, 2 handfuls sweet thai basil, and 10 thai chilli peppers, all cut into bite sized pieces finally 2 cans coconut milk, 4 tablespoons thai fish sauce, and 1/4th cup brown sugar. add in 1 cup of water, and simmer until reduced by 1/2. serve over rice. I am awesome.
